So I bought this stone and it is wonderful. As per the instructions in the box, it recommends putting the pizza steel on the lowest bottom rack in your oven and placing a pizza stone on an oven rack above the pizza steel. Make sure you give enough space to place and remove the pizza. I would say by following this method, you get the perfect restaurant-quality pizza in your home.
If you are thinking about buying this pizza steel, make sure you also get yourself a pizza stone too.

La piedra tiene unos acabados de calidad, así como la pala de madera, que también es muy útil a la hora de manejar las pizzas. Es importante espolvorear de harina la pala antes de poner la masa fresca, ya que si no se quedará pegada y resulta imposible dejarla en la piedra.
Hay que tener cuidado con las manchas, ya que al ser porosa se mancha con facilidad y es imposible de limpiar del todo. Viene perfectamente empaquetada para evitar roturas.

La pietra refrattaria è antiaderente, non assorbe e non rilascia odori e sapori. Nel nostro caso, si tratta di una piastra di grandi dimensioni (38 x 30 x 1,5 cm) in pietra refrattaria che, riscaldandosi in maniera uniforme e mantenendo a lungo il calore, consente di cuocere in casa, direttamente nel forno elettrico o addirittura sul grill, pizza, pane, ma anche crostare e biscotti, come nei migliori panifici.
Come usare la pietra refrattaria nel forno elettrico
Per il primo utilizzo della pietra refrattaria è necessario pulirla. Sarà sufficiente passare sulla superficie un panno imbevuto di acqua e sale oppure acqua e aceto. Evitare assolutamente di usare detersivi. Dopo aver lasciato asciugare la pietra si potrà procedere all'utilizzo. Va posizionata sul ripiano del forno oppure sul grill ed è bene lasciarla riscaldare alla massima temperatura per 1/2 - 1 ora circa. Una volta che la pietra refrattaria avrà raggiunto un'alta temperatura si potrà procedere con la cottura, posizionandovi sopra la pizza, il pane o la focaccia direttamente a contatto con la pietra. Poiché la pietra potrebbe macchiarsi con i condimenti, si può ricorrere all'uso di carta forno perché rimanga sempre pulita (usatela, io mi sono pentita di non averla messa sin dal primo utilizzo).
La mia scelta è ricaduta sull'acquisto di questa pietra refrattaria per il semplice fatto che non mi ritenevo soddisfatta della cottura nel mio modesto forno elettrico. Come ho già detto, sono orgogliosa del mio impasto per pizza e spesso utilizzo farine biologiche o di grani antichi le quali hanno anche prezzi importanti e la mancanza di un forno a legna svilisce i risultati attesi. Devo dire che con la piastra in pietra la storia cambia completamente. Infatti la cottura avviene in maniera uniforme e l'impasto diventa croccante e dorato al punto giusto. La piastra, poi, ha un aspetto esteticamente molto gradevole, tanto da poter essere utilizzato anche per mettere a tavola formaggi e stuzzichini.
Un altro punto a favore della pietra refrattaria in questione è l'accessorio che l'accompagna, una bellissima pala in legno naturale, perfetta per sfornare la pizza, praticissima grazie al manico.

En ce qui concerne la pierre, il faut penser a préchauffer le four une bonne 20-30aine de minute avec la température au max (250°C chez moi). Le but c'est de chauffer la pierre pour qu'elle provoque un choc thermique à la pizza !
Et ça marche super bien !
J'ai l'habitude de faire très souvent des pizzas au four et c'est bien la première fois que j'arrive a avoir une pate ccroustillante mais pas dure ! La pate était délicieuse et tout le monde a été agréablement surpris par le rendu des pizzas.
Il faut faire attention par contre car une fois la cuisson terminé, la pierre reste chaude assez longtemps.
En ce qui concerne la pelle en cadeau avec, je la trouve trop petite et trop épaisse, je lui préfère ma pelle habituelle. Mais ça a la limite c'est un détail, l’intérêt ici c'est la pierre, et elle fait super bien son job !
A voir dans le temps si elle tient bien, mais elle m'as l'air robuste.
